🍦 It's MAFHAF Friday and we have got a treat for you!

This one’s inspired by our family recipe tinkerer Drew — always mixing things that *shouldn’t* work… until they do. Today, you get Blueberry Muffin Ice Cream + free recipe cards, sticker sheets, and labels to make it your own. 💙

Steps

  1. Check out our recipe card for a list of ingredients (Download below): Prepare muffins with Krustez Wild Blueberry Muffin Mix. Use box instructions to prepare muffin mix. Box will come with a can of wild blueberries and juice. Use the blueberries in the muffin mix, and save the blueberry juice for DIY syrup. Once all ingredients are combined, line a muffin tray with paper cups, and bake according to box directions. Cool muffins, once cool grab a bowl and then crumble 4–5 muffins into the bowl. Set aside for later use.
  2. Blueberry swirl (bonus compote/syrup): Grab the saved blueberry juice and pour it into a small sauce pan. Add 2 Tsp of sugar to the juice. Stir to dissolve the sugar over medium-high heat. Simmer the reserved juice + 2 tbsp sugar for approximetly (5 mins). Use caution as contains will be extremely hot. Turn off Let cool. Set in fridge once cooled to later use with ice cream.
  3. Make the ice cream base: Grab your trusty stand mixer and whip 2 cups of heavy cream until it makes soft peaks. Fold in 1 cup sweetened condensed milk + 1 tsp vanilla into the heavy cream with a spatula. Goal is to incorporate the mix but not loose airy volume.
  4. Combine:Take out the cool blueberry swirl from fridge. Grab the bowl of ice cream base, and bowl of crumbled muffins. Using the Ice Cream bowl, Fold muffin chunks into base. Gently fold in the crumble pieces till fully incorporated (still want chuncks not mashed up muffin soup). Take a spoon and Swirl in blueberry syrup. Again should make stripes and not combine syrup into mix.
  5. Freeze: Pour sweet concotion into a loaf pan, cover with a lip / ceran wrap, and freeze 4+ hours. Over night would be preferred. Any extra blueberry syrup save for serving time in the fridge.
  6. Scoop & Share: Take out your loaf pan, and remove lip / ceran wrap. Get a ice cream scoop, a bowl/ ice cream cone, and a spoon. Using the ice cream scoop glide it over the frozen treat to scoop desired amount of servings into bowl or cone. Serve with extra syrup drizzle, that you saved. 🍨
